  • 500 g beef chuck or brisket cut into chunks
  • 2 tbsp oil
  • 1/4 cup soy sauce low-sodium optional
  • 4 cups beef stock
  • 2 pieces star anise
  • 2- inch piece ginger sliced
  • 4 garlic cloves minced
  • 2 tbsp brown sugar
  • 400 g fresh wheat noodles or rice noodles for gluten-free
  • 2 heads bok choy blanched
  • 2 green onions sliced (for garnish)
  • Optional: Chili oil for a spicy beef noodle soup twist

Instructions
 

  • Heat oil in a pot and sear the beef chunks until browned. Remove and set aside.
  • Add ginger, garlic, and star anise to the pot. Sauté until fragrant.
  • Return the beef to the pot. Add soy sauce, beef stock, and brown sugar. Bring to a boil, then simmer for 1.5-2 hours.
  • Cook noodles according to package instructions. Drain and set aside.
  • Blanch bok choy in boiling water for 2 minutes.
  • Assemble by placing noodles in a bowl, adding beef and broth, and arranging bok choy on top.
  • Garnish with green onions and optional chili oil. Serve hot.
